Been a wee while, sorry guys.

OK, so today’s food and fitness diary:

HEALTHY A:  250ml Semi Skimmed Milk (used for Coffees)

HEALTHY B:  2 Slices Wholemeal Bread

BREAKFAST:  Turkey Escalopes with Lemon and Sage

LUNCH:  Health B Option (2 Slices of Bread) with 1 tin of Mackerel in Spicy Tomato Sauce and Baby Leaf Rocket, Tomatoes, Cucumber and 2 Tbsp Chilli, Lime & Coriander Dressing (3 Syns)

DINNER:  Lemon and Garlic Chicken with a Warm Potato Salad (Extra Easy Meals in Minutes Cookbook):
Chicken Fillet, Lemon, Rosemary, Garlic, Egg White, New Potatoes, Green beans, Tomatoes, 4 Tbsp Fat free Vinaigrette

SNACKS:  

TOTAL DAILY SYNS: 3 Syns

FITNESS

Took the dog for a walk while I walked to group weigh-in today, so approx 45 Mins.  Cleaning the house, hoovering etc so that counts as something……

TOTAL MINS/HOURS FITNESS: 45 Mins Walking Plus cleaning….

SUPERFREE FOODS (Such as Fruits and Veggies).  FREE FOODS (Such as Meats and Fish).  FREE FOODS (Such as Potatoes, Pasta & Rice).  OTHER FREE FOODS (Such as Fat Free Yogurts, Fat Free dressings etc).  SYNS (All the bad foods.  Up to 15 Syns per day).

BREAKFAST:  Cinnamon Muffin (8.5 Syns) with Clover light (1 Tbsp 3.5 Syns) and Healthy B Option

LUNCH:  Thai-Style Chicken Cakes (Extra Easy Meals in Minutes Cookbook):
Chicken Fillets, Garlic, Ginger, Spring Onions, Coriander, Mint, Lemongrass, Lime, Chilli, Rocket, Tomatoes, Cucumber, 2Tbsp Chilli, Lime and Coriander Dressing (3 Syns)

DINNER:  Turkey Escalopes, Lemon, Sage, Mashed Potatoes (With Milk and 1 tbsp Butter) & Green Beans with Chicken Gravy

SNACKS:  

TOTAL DAILY SYNS: 15 Syns

FITNESS

Just cleaning today.  Not done much.

TOTAL MINS/HOURS FITNESS:  Zero fitness, just house cleaning.

Had a major craving for bread this week so I don’t think I’ve done very week and I’ve not been doing my food diary!  Tut Tut Tut!

START WEIGHT: (11/06/2012) 16st 1lb

LAST WEEKS WEIGHT:  (15st 5lbs)

TODAY’S WEIGHT: 15st 5.5lbs (Gained Half a Pound)

TOTAL LOST TO DATE:  9.5lbs

Really need to step it up now!  People are losing loads and there’s me SLOOOOOWLY losing the flab.

Sorry, not been on for a while!  I haven’t really been keeping track of what I’ve eaten the last two weeks.  Last week I weighed in at the same which wasn’t nice but at least it wasn’t a gain as everyone keeps reminding me.

Weigh in tomorrow….I don’t think I’ve done too good.  I’ve been eating LOADS of Bread!  It’s my own fault of course, but it just tastes so so nice!  With lovely melted butter (Light) on it too!

Chunky doorstep white bread with melted butter, Naan bread, Savoury muffins etc.  Yummy but naughty.

Better start walking Toby for longer stretches I think.  I need to lose the flab and he needs to gain muscle (Rescue dog and was starved the poor thing)

 

Butternut Squash and Pepper Soup (Syn Free)

I’ve had a Butternut Squash in my Fridge for a couple of days and so I needed to use it (OK, more than a couple of days) so I made a very yummy soup with it and it’s syn free.

1 Butternut Squash, chopped (Mind those fingers when cutting it)
3 Peppers (Red, Yellow, White etc, doesn’t matter)
1 pint of Vegetable Stock

Cut up the Butternut Squash into cubes and slices the peppers and place them on a tray and roast in the over until soft, the peppers skins will go black but this is fine!  I put them in at Gas Mark 5.
I didn’t cover them in oil or Fry light and they worked fine.  You could probably put a  load of herbs in their too to add a bit more flavour and aroma :)

 Put all the Roasted Squash and peppers in a big bowl, add the stock and blitz!

It’s as simple as that, all done :)

As more or less stock to suit your desires, this makes it thick but not too thick.

You could then freeze if you wanted to :)

I’ve no idea if my followers can see my other blogs so I thought I would just put up a post with the links on :)

In The Eyes Of Children is a blog I set up last year but I’ve not been on it much since my Nan passed away and to be honest I just ended up forgetting about it.  It’s been nice to read through the things my kids have done and said.  You will find posts about weird things and I hope you will laugh out loud as much as I do.

The Coffee Cups which is basically my Coffee Dates with my husband.  We have these regularly and it’s probably really boring to you all lol.  It includes my reviews of places to eat including if they are suitable for my slimming world diet etc.  Also includes other types of dates we have, like movies, walking and humourous things that tend to happen – ok, now I’m boring myself!!
